I think that is a great idea to track the opening public percentage but I slao think that you should laso put the pecentage of money on each side and track that as well. This sometimes differs greatly than just the percentages of people. You hmay have someone dump 50k on one side which could actually move a line a 1/2 point but the percentage of people is not going to move at all. Obviosly (in this case) there is someone who feels pretty strongly about a particular side and, quite often, there is a good reason.
Another thought is what I saw a guy do at another site. I have copied below

These were posted only 2 minutes apart and you can see that the under got a huge hit. I saw that and immediately played the under and I also played Denver because (more often than not) the public is wrong when it comes to the NFL.
